Autumn in Kentucky DAY 5


Welcome to Day 5! 

We made it! 5 full days of Haunting Recipes
Daring Releases, and of Ghoulish Deals!

For the Final Recipe this week we are posting one that we give you every year, 
because its JUST THAT GOOD

King Arthur Pumpkin Cake Donuts 

Ingredients: 
1/2 C Vegetable Oil
3 Large Eggs
1 - 1 1/2 C Sugar
1 1/2 C Pumpkin Puree
1 1/2 TSP Pumpkin Pie Spice 
1 1/2 TSP Salt
1 1/2 TSP Baking Powder
1 3/4  C + 2 TBS King Arthur Flour
3 TBS Cinnamon Sugar

Directions: 
-Preheat Oven to 350. Lightly grease 2 standard doughnut pans.
-Beat together the oil, eggs, sugar, pumpkin, spices, salt, and baking powder until smooth.
-Add the flour, stirring until smooth.
-Fill the wells of the doughnut pans about 3/4 full, use a scant 1/4 C of batter in each well. 
-Bake the doughnuts for 15-18 minutes, or until a cake tester inserted into the center comes out clean.
-Remove the doughnuts from the oven, and after about 5 minutes, loosen their edges, and transfer them to the rack to cool.
-While the doughnuts are still warm, but no longer fragile, gently shake them in a bag with the cinnamon-sugar.
-Cool completely, and store at room temperature for several days. 
-Yields: 12 donuts

We would  like to introduce our NEW Cottonwood House Logo

Yes, it does look at lot like our Old One!  Since it is our 25th Anniversary we decided to Change it up a bit to Better Reflect 
Who We Are.
*The House Appliqué is presented exactly the way the Cottonwood House looked when I was growing up.  
*It is surrounded by Cottonwood Trees which my Grandmother watered by carrying buckets of water from the irrigation ditches to each tree when she was a small girl.  We have only two in our appliqué but there were actually 100 trees transplanted to the property from a nearby river bed.
*My Grandmother had an Amazing Garden...thus the Folky Flowers.
*The Pumpkins and Acorns reflect our love here at the Cottonwood House for the Harvest Season. (We named our youngest daughter Autumn!)

As we created the Foundation of the Cottonwood House, we added the things that Hold Us Up and Keep Us Steady and Strong.
*The Sheep represent our Forefathers who raised Sheep here at the Cottonwood House for Generations.
*We added the Humble Bees to represent our Pioneer Ancestors who traveled West pushing Handcarts.  We are and Cherish the Mormon Faith.  The Bees hold a special place in heart as they are a symbol of Industry and Service.  We try as a Family to always be of Service to others.
*The Single Heart is for our Sweet Daughter Emily who was killed in a car accident as a Young Woman.  She loved to stitch and be involved in our family business.  Our hearts are broken but we look to forward to when we will be with her again.
*Finally the Key...We are so grateful to all those who went before us and continue to walk with us.  We want to pass down this Legacy of Goode and Kindness to our Children so they too will be Keepers of the Olde.

Autumn in Kentucky DAY 4

Who is ready for some Fun

Harvest Hash Chex Mix 

We found this recipe from Blogger "One Little Project" 

Ingredients: 

For the Sauce: 
2/3 C Butter, melted 
2/3 C Brown Sugar, packed 
2 TBS Vanilla Extract 

For the Mix:
1 Box Rice Chex
1 Bag Bugles 
4 C Pretzels
1 Heaping C Candy Corn
1 Heaping C Candy Corn Pumpkins
1 Bag Reese's Pieces 

Directions: 

Preheat the oven to 275
Melt the butter in the microwave in medium bowl or measuring cup.
Add the Brown sugar and vanilla extract and whisk well until combined and dissolved.
In a LARGE bowl, add the Chex cereal, pretzels and Bugles.
Pour the sauce over the cereal mixture and toss gently until evenly coated. 
Line two large baking sheets with parchment paper.
Divide mixture on the two baking sheets and spread in even layers.
Bake for 45 minutes, stirring every 15 minutes.
Remove from the oven and allow it to cool. Then add it to large bowl, 
along with Candy Corn, Pumpkins and Reeses Pieces. 
Toss to combine.
Store in airtight container.

Autumn in Kentucky DAY 3


Day 3!

Lets Get Started! 

Are you ready for the Super Secret Cottonwood House Family Cinnamon Roll Recipe? 

We are ONLY giving it to YOU because Followers, and Supporters of the Cottonwood House are Truly Family to us! 

I Give You...

Grandma's Cinnamon Rolls 


Ingredients:
Dough-
1 C Softened Margarine or Butter
2 1/2 C Warm Water
3/4 C Sugar
2 TBS Yeast
2 1/2 TSP Salt
4 Eggs
7 1/2 C Flour

Filling-
1 Stick Butter
2 C Brown Sugar
1 C Cinnamon Sugar 

Directions: 
Dissolve yeast in the warm water. Add the sugar to this mixture. 
Set Aside.
Blend margarine or butter, eggs, and salt. 
Stir in yeast mixture. 
Add 7 1/2 C flour. 
Blend Well.
Cover. 
Let rise for one hour before making into cinnamon rolls. 

Roll out dough.
Melt butter, and evenly spread onto the dough. 
Alternate sprinkling cinnamon sugar, and brown sugar onto melted butter.
Tightly Roll.
Cut into about 1 inch slices.
Cook for 10 minutes at 375.
Let cool and ENJOY!

Autumn in Kentucky Party DAY 2


Welcome to Day 2!

Before we get started on today's Ghoulish Festivities, we need to Announce

Here we go! 

Your Mouth will be Watering at this Next Recipe! 

Nothing says FALL like a Warm Bowl of Soup!

Broccoli and Cheddar Cheese Soup

Ingredients: 
2 tbsp. olive oil
2 stalk celery
2 clove garlic
1 onion
1 medium russet potato (about 8 oz)
1 bunch broccoli (about 1 1/4 lb)
Kosher salt and pepper
1 c. lowfat milk
¼ tsp. freshly grated or ground nutmeg
6 oz. extra-sharp Cheddar
Directions:
              Heat oven to 400°F. On a rimmed baking sheet, toss the bread with 1 Tbsp oil. Bake until golden brown and crisp, 5 to 7 minutes; set aside.
            1. Heat the remaining Tbsp oil in a large saucepan over medium heat. Add the celery, garlic, onion, potato, broccoli stalks, 3/4 tsp salt and 1/4 tsp pepper and cook, covered, stirring occasionally, until just tender, 5 to 6 minutes.
            2. Meanwhile, cut the remaining broccoli into small florets. Add the florets and 3 cups water to the vegetables, cover and bring to a boil. Once boiling, the broccoli should be just tender; if not, simmer 1 to 2 minutes more.
            3. Remove from heat and, using a handheld immersion blender (or a standard blender, working in batches and returning to the saucepan), purée the vegetable mixture. Add the milk and nutmeg and simmer to heat through, about 2 minutes. Add the cheese and stir until melted. Serve with the croutons.
