TODAY'S RECIPE IS A COTTONWOOD HOUSE FAMILY FAVORITE

King Arthur Flour Pumpkin Donuts!

Pumpkin doughnuts: Mix the ingredients

Place the following in a mixing bowl:
1/2 cup vegetable oil
3 large eggs
1 1/2 cups granulated sugar
1 1/2 cups pumpkin purée (canned pumpkin)
1 1/2 teaspoons pumpkin pie spice, or 3/4 teaspoon ground cinnamon plus a heaping 1/4 teaspoon each ground nutmeg and ground ginger
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder

Beat everything together until smooth.
Add 1 3/4 cups + 2 tablespoons (8 ounces) King Arthur Unbleached All-Purpose Flour, stirring just until smooth.
BTW, this is a great place to try King Arthur Unbleached Self-Rising Flour. Reduce the salt to 1/2 teaspoon; omit the baking powder, and substitute 2 cups (8 ounces) self-rising flour for the all-purpose flour.

Spoon the batter into the pans

As I mentioned earlier, if you don’t have doughnut pans, you can bake these in a couple of standard muffin tins; they just won’t be doughnuts.
Fill the wells of the doughnut pans about 3/4 full, using a scant 1/4 cup of batter in each well; a tablespoon cookie scoop helps with this task.
If you’re making muffins, fill each well about 3/4 full; the recipe makes 15, so you’ll need to bake in two batches (unless you have two muffin pans).

Bake the doughnuts

Bake the doughnuts for 15 to 18 minutes, or until a cake tester inserted into the center of one comes out clean. If you’re using self-rising flour, bake for the longer amount of time.
If you’re making muffins, they’ll need to bake for 23 to 25 minutes.
Remove the doughnuts from the oven, and after about 5 minutes, loosen their edges, and transfer them to a rack to cool.

Shake the warm doughnuts in cinnamon-sugar

While the doughnuts are still warm (but no longer fragile), gently shake them in a bag with cinnamon-sugar. Or better yet, pumpkin-spice sugar, made by combining the aforementioned pumpkin pie spice (or substitute) with granulated or extra-fine sugar.
Serve immediately.

Today's Recipe is from "The Girl Who Ate Everything" 
Homemade Chicken Noodle Soup

Ingredients: 
Egg Noodles:
1 1/4 C all-purpose flour
1 pinch salt
1 egg (beaten)
1/4 C milk
1/2 tablespoon butter, softened 

Soup:
2 tablespoons butter
3/4 c chopped onion
3/4 c chopped celery 
1 c sliced carrots
2 garlic cloves, minced 
9 cups reduced sodium chicken broth
2 cups uncooked egg noodles
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
2 cups cooked and shredded chicken

Instructions: 
1. For the noodles; In a large bowl, stir together the flour and salt. Add beaten egg, milk, and butter. Knead dough until smooth, about 5 minutes. Let the rest in a covered bowl for 10 minutes. 

2. On a floured surface, roll out 1/8 or 1/4 inch thickness. Cut into desired lengths and shapes. 

3. Separate and allow to air dry before cooking. For best results, let them air dry for a couple hours.

4. For the soup: In a large pot over medium heat, melt butter. Cook onion, celery and carrots in butter until just tender, 5 minutes. Add garlic and cook for an additional minute. Pour in chicken broth and stir in noodles, basil, oregano, salt and pepper. Bring to a low bowl and reduce heat, simmer for 20 minutes. Stir in the chicken and cook until heated through.

Today's Recipe..

Hot Apple Cider



*10 Apples, Quartered
*3/4 Cup White Sugar
*1 TBS Ground Cinnamon
*1 TBS Ground Allspice

1. Place Apples in a large stockpot, and add enough water to cover by at least 2 inches. Stir in sugar, cinnamon, and allspice. 
Bring to a boil. Boil, covered, for 1 hour. Cover pot, reduce heat, and simmer for 2 hours.
(If you have a Juicer it will make this process so easy, and FASTER!) 

2.Strain apple mixture through a fine mesh sieve. Discard solids. Drain cider again through a cheesecloth lined sieve. Refrigerate until cold. 

Enjoy!
