LAMBING SEASON PARTY DAY 5



We have made it to our 5th and FINAL day of our Lambing Season Party! 

This week has flown by! 
Thank you for spending our Favorite Time of Year with us here at the Cottonwood House.

One last recipe from one of our Favorite Cookbooks from Six Sisters' Stuff

Gooey Lemon Bars


Crust:

1 box lemon cake mix
1/2 cup butter 
1 egg slightly beaten

Filling/Frosting:

2 to 3 C powdered sugar
3 to 4 TBS butter, softened 
1 1/2 TBS lemon jice 
3 to 5 drops yellow food coloring 
q package cream cheese, room temperature 
2 eggs

Preheat oven to 350 degrees F.  Combine crust ingredients and mix with fork. Press down in a 9X13-inch pan with greased bottom. Set aside. 
For filling, mix powdered sugar and butter with a hand mixer. Add enough lemon juice to form the consistency of thick frosting. Fold in cream cheese and yellow food coloring. Set aside 1 cup to spread on top after baking. Be sure to not skip this step! Add eggs to remaining frosting mixture and beat until fluffy. Spread on top of cake mix in the pan and bake 25 to 30 minutes. Watch carefully so it doesn't over-bake. Let cool completely and then spread reserved frosting mixture on top. 
Makes 20 bars.

LAMBING SEASON PARTY DAY 4


Day 4 Has Arrived!

Today's recipe is one of our Favorites from the Six Sisters' Stuff cookbook! 

Aloha Burgers


1 1/2 Pounds Ground Beef
2 Cups Teriyaki Sauce, divided
4 Pineapple Rings
4 Slices Cheddar Cheese
4 Hamburger Buns with Sesame  Seeds
4 TBS Mayonnaise
1 Tomato, sliced
1 C Shredded Lettuce

Form ground beef into 4 equal-sized patties. Pour 1 cup teriyaki sauce over hamburger patties and marinate at least 30 minutes. Pour remaining cup teriyaki sauce into a bowl and let pineapple rings marinate at least 30 minutes. Grill patties over high heat about 3 minutes on each side for medium doneness, longer for well-done burgers. Burgers should reach an internal temperature of 160 degrees F. Place 1 slice cheese on each burger and let the cheese melt before removing burgers from grill. Grill pineapple rings over medium heat for 1 minute on each side. 
To assemble burgers, spread 1/2 tablespoon mayonnaise on both halves of hamburger buns. Place 1 tomato slice on the bottom half of each bun and top with hamburger patty, pineapple ring, shredded lettuce, and remaining bun. 
Serve with extra teriyaki sauce on the side.
Makes 4 burgers.

Strawberry Sunrise Drink


1/2 Pound Strawberries, washed and hulled
1/4 Pound Pineapple, peeled and chopped
1/2 Banana
2 C Orange Juice
6 Large Ice Cubes 

Cut up fruit and place in blender. Add orange juice and ice cubes. Blend about 30 seconds, or until all of the fruit and ice is blended and mixed with the juice.
Makes 4 Servings

LAMBING SEASON PARTY DAY 2

We are jumping right into Party Mode today!

Onto another Six Sisters' Recipe! 

FUDGE CRINKLE COOKIES

1 box devil's food cake mix
1/2 C Vegetable Oil
2 Eggs
1/2 C Powdered Sugar

Preheat oven to 350 degrees F. Stir together the dry cake mix (DO NOT FOLLOW DIRECTIONS ON THE BOX- YOU JUST WANT TO USE THE DRY MIX THA IS IN THE BOX), oil, and eggs in a large bowl until dough forms. Dust hands with powdered sugar and shape dough into 1 11/2 inch balls. Roll balls in powdered sugar and place 2 inches apart on ungreased cookie sheets. Bake 7 to 9 minutes, until center is just set. Remove from pans after a minute or so and cool on wire racks. 

Makes 36 cookies.

LAMBING SEASON PARTY DAY 1


Welcome to Day 1! 

We have been Counting Down the Days for our Lambing Season Celebration to begin! 
Before we start it's IMPORTANT to know the Rules and Guidelines for our Annual Blog Parties.

Let's Get Started!




Crunchy Black Bean Tacos


1 Can Black Beans (drained and rinsed)
1/2 C Minced Red Onion
1 tsp Cumin
1 tsp Paprika
2 TBS  Chopped Cilantro
1 tsp Oil
8 Corn Tortillas
1 C Shredded Pepper Jack Cheese
1 Avocado, sliced 
Salsa for Garnishing
Sour Cream for Garnishing

In a Medium bowl, combine beans, red onion, cumin, paprika, and cilantro. Heat a large, nonstick skillet over medium-high heat and coat with oil. Place one tortilla at a time on the hot skillet and add about 1/4 C of bean filling to one half of the tortilla. Top with a Sprinkle of grated cheese. Use a spatula to carefully fold the tortilla over so it forms a shell. Press down lightly on the tortilla with the spatula so it holds its shape.

Cook each taco about 3 minutes per side, or until golden brown and crispy. Serve with avocado, salsa, sour cream, or any toppings you prefer. 

Makes 8 Tacos.
