The Good Witches of Salem

Lambing Season Party Day 5



Happy St. Patrick's Day! 

We have come to the LAST DAY of our Lambing Season Open House Party.

All of us at the Cottonwood House are SO APPRECIATIVE, and SO LUCKY to have such great customers!

Now onto our LAST Recipe. This one is sure make you feel LUCKY

St. Patrick's Day Rice Krispie Treats with Lucky Charms Marshmallows



INGREDIENTS: 

1/4 C Butter
4 C Soft Marshmallows
5 C Rice Krispie Cereal
1/2 TSP Vanilla Extract
Green Food Coloring
Approximately 3/4 C of Lucky Charms Marshmallows

DIRECTIONS:
Melt butter over low heat until completely melted. Gradually add marshmallows and stir often to avoid burning them. When marshmallow/butter mixture is completely melted, add 1/2 teaspoon of vanilla and your green food coloring and mix well. Remove from heat and stir in your Rice Krispie cereal. Once mixture is mostly combined, stir in the Lucky Charm’s marshmallows.  My kids and I picked them out of the Lucky Charms. If possible, store in an air tight container and they will stay softer longer! A ziplock bag works great

Lambing Season Party Day 4


Happy Day 4! 

Can you believe we only have ONE DAY LEFT?!

This next recipe is too good not to share! 

The BEST Blueberry Cheesecake



    INGREDIENTS 
    1 C graham cracker crust 
    2 TBS melted butter
    1 TBS Sugar
    3 (8 ounce) Cream Cheese
    1 C Sugar
    3 TBS Flour
    1/2 TSP Salt
    3 eggs
    1 ounces Sour Cream
    1 TSP Vanilla
    1 TSP Lemon Extract
    2 C Blueberries 
    1 C Cool Whip
    1/4 C Sour Cream
    DIRECTIONS
    1. Combine graham cracker crumbs, melted butter and sugar. Press into bottom and up sides of a 9 inch springform pan. Bake at 350 degrees for 5 minutes. Remove and let cool.
  1. Beat softened cream cheese and add 1 cup sugar, flour and salt until blended. Add eggs, one at a time and blend.
  1. Add sour cream, vanilla and lemon extracts. Gently stie in blueberries. Pour mixture into cooled crust.
  1. Bake at 325 degrees for approximately 50 minutes. (Cheesecake will be done when it still jiggles in the middle.) Turn off oven and let remain in oven with door open for 20 minutes. Remove and let cool. Cover and chill cheesecake in refrigerator.
  1. Lightly mix Cool Whip and 1/4 cup of sour cream. Spread over cheesecake and refrigerate for at least 6 hours before cutting.

Lambing Season Party Day 3


Welcome to Day 3!

Now onto a recipe that is sure to become a FAVORITE! 

Homemade Pretzel Bread



We found this Recipe from Food Joy Sunshine. It has quickly become a family favorite around here!
Ingredients:


  • 2 ¼ tsp yeast
  • 1 cup warm water (105-110 degrees F) 
  • 2 TBS whole milk
  • 3 TBS brown sugar
  • 4 TBS butter, melted
  • 1 tsp salt
  • 3 cups all-purpose flour
  • 4 quarts water 
  • ½ cup baking soda
  • Kosher salt to taste 
  • 2 TBS butter, melted
  • 1-2 TBS coarse sea salt

  • Combine yeast, water, and brown sugar in the bowl of your standing mixer fitted with the dough hook. Let stand for 5 minutes (until foamy).
  • While yeast is proofing…melt butter in a microwave-safe bowl. Mix in milk and set aside. 
  • Once yeast is proofed, add milk/butter to yeast mixture and mix on low speed with dough hook until just combined. 
  • Add salt and flour and mix with dough hook until flour is fully incorporated. 
  • Knead in your mixer until the dough forms a slightly tacky, but firm ball, you may need to add a little more flour 1 TBS at a time, but be careful, you want your dough a little tacky but not too sticky to handle. 
  • Oil a large bowl, place the dough ball in the bowl, and cover with a damp towel in a warm place to let rise for one hour or until doubled in size. 
  • Preheat oven to 400 degrees F and bring the 4 quarts of water to a boil. When the water is boiling, slowly add the baking soda (Be careful or you will have a baking soda/water explosion)! 
  • Remove the dough from the bowl and gently press out the air bubbles. 
  • Make two balls of dough the same size.  Drop one of the balls into the boiling baking soda water. Boil for 60-90 seconds on each side, turning it once to guarantee both sides covered. Drain the excess water from the dough and place it on an oiled baking sheet. 
  • Immediately sprinkle coarse sea salt over the bread to your specific tastes, and use a knife to cut a small incision on the top of the bread so the dough has somewhere to expand. 
  • Repeat with second ball of dough.
  • Cook the bread for 22-25 minutes, rotating the baking sheet once. 
  • Once removed from the oven, immediately brush the melted butter over the loaves to guarantee a soft crust.

Lemon Bars!


INGREDIENTS
For the crust:
  • 1 and ¾ cups (220 grams) all-purpose flour (spooned & leveled)
  • ¼ cup (32 grams) cornstarch
  • ½ cup (100 grams) granulated sugar
  • ¼ teaspoon salt
  • 1 cup (230 grams) unsalted butter, softened
For the lemon filling:
  • 1 and ½ cups (300 grams) granulated sugar
  • ¼ cup (32 grams) all-purpose flour
  • 4 large eggs
  • ½ cup (120ml) fresh lemon juice

  • INSTRUCTIONS

  • To make the crust:
    1. Preheat oven to 350°F. Line a 9x13 baking pan with aluminum foil or parchment paper, making sure to leave some overhang for easy removal, and spray with nonstick cooking spray. Set aside.
    2. In a large mixing bowl, whisk together the flour, cornstarch, sugar, and salt. Cube the butter into smaller pieces and add to the flour mixture. Using a pastry cutter (or your hands) cut the butter into the mixture until it's crumbly and starts to come together. Scoop the mixture into the prepared baking pan and press it down into one even layer.
    3. Bake at 350°F for 20-25 minutes, or just until the top is set and edges are lightly golden brown. Remove from the oven and set aside. Keep oven temperature at 350°F.

    To make the lemon filling:
    1. In a large mixing bowl, whisk together the granulated sugar and flour. Add in the eggs and lemon juice and mix until fully combined. Pour the lemon filling over the crust and return to the oven.
    2. Bake at 350°F for 18-22 minutes or until the lemon filling is set. Remove from the oven and transfer to a wire rack to cool for 1 hour, then cover tightly, and refrigerate for at least two hours. Sift powdered sugar on top, slice into bars, and enjoy!

Strawberry Pecan Salad

So Good and So Refreshing!



INGREDIENTS:

FOR THE SALAD:

  • 1 cup Fisher Nuts Pecan Halves
  • 1/4 cup granulated sugar
  • 12 oz package Romaine lettuce, chopped
  • 8 oz fresh strawberries, halved
  • 4 oz fresh blueberries
  • 2 oz goat cheese, crumbled
  • 1/4 cup red onion, sliced (cut into small pieces)
  • 15 oz can Mandarin oranges, drained
  • 2 chicken breasts, cooked and diced

FOR THE DRESSING:

  • 1/2 cup granulated sugar
  • 1/2 cup lemon juice
  • 1 tsp dijon mustard
  • 1/2 tsp kosher salt
  • 2/3 cup olive oil
  • 1 Tbsp poppyseeds
In a small skillet over medium heat, saute pecans with sugar. This will take several minutes for the sugar to dissolve as you stir the pecans. Set aside and cool.
In a large bowl, combine romaine, berries, oranges, cheese and onion. Add diced chicken. Toss gently.
In a small mason jar, combine dressing ingredients and shake with lid on.
When ready to serve, add candied pecans and drizzle with dressing.
